印傭KOL教煮荷葉蒸排骨 點樣增加荷葉香?

今日有請印傭KOL Kochi Ms Hei教煮荷葉蒸排骨,有乜方法添荷葉香?這道菜看起來複雜非常,淨是材料已有十多樣,但各位姐姐不用害怕,跟着Ms Hei的食譜整就實無死!事不宜遲,快看片吧。
根據立法會秘書處資料研究組2017年7月的報告,截至2016年,香港有超過35萬名外傭,大小家務由她們負責,不少外傭煮得一手好餸,我們把「尋人信息」發放在網上平台HelperChoice,找出這班外傭KOL,教香港人及同鄉煮餸,還大談兩地文化差異。茫茫傭海中,我們找到Kochi Hei(Hei)。Ms Hei來港17年,自創超過六百個食譜,更曾為香港國際社會服務社煮食導師。

荷葉蒸排骨材料多達17款。

製作過程只需約30分鐘。

荷葉蒸排骨,材料費約需$50。
材料及調味:排骨約500克、荷葉2大塊、八角1個、白飯3湯匙、胡椒子1湯匙、五味粉1湯匙、油2茶匙、葱少許、辣椒少許
醃料:水3湯匙、粟粉1湯匙、胡椒半湯匙、蠔油1茶匙、砂糖少許、鹽少許、蒜頭半個、麻油1茶匙
步驟:
1.用鹽水浸排骨約5分鐘,辟除血水及豬臊味。
2.用清水沖洗排骨,用毛巾或抹手紙抹乾排骨。
3.醃排骨:把已切碎的蒜頭、麻油、鹽、砂糖、蠔油、胡椒、栗粉,連同排骨攪拌。
4.洗米,開火,米粒連同八角、胡椒籽略炒約3分鐘,放涼備用。
5.用搗盅將飯粒連八角、胡椒籽舂勻,應順時針舂,力度不宜太大,以免舂碎飯粒。
6.將飯粒連八角、胡椒籽放入已醃好的排骨,一同攪拌。
7.煲水,水滾後浸荷葉約5分鐘,令荷葉不會變脆,更容易包。
8.在碟上攤開荷葉,放入攪拌好的飯粒及排骨,隔水蒸約15分鐘。
9.切碎葱及辣椒,加在排骨上作伴碟。
10.打開荷葉,加少量滾油,令色澤更好。

Steamed ribs in lotus leaves
Ingredients and seasonings
500g ribs
2 big lotus leaves
1 star anise
3 Tbsp white rice
1 Tbsp whole pepper
1 Tbsp five-spice powder
2 tsp oil
A little spring onion
A little chilli
Marinade:
3 Tbsp boiled water
1 Tbsp corn flour
1/2 tsp pepper
1 tsp oyster sauce
A little sugar
A little salt
1/2 garlic
1 tsp sesame oil
Steps:
1. Soak the ribs in salt water for5 mins: Tips: It removes the red juice and pig stink.
2. Rinse the ribs and dry them with a towel/ paper towel.
3. Marinate the ribs with prepared marinade.
4. Stir fry the washed rice with star anise and whole pepper for2-3 minutes. Let it cool down.
5. Mix the rice, star anise and whole pepper evenly in a mill. Tips: Gently do it clockwise in order not to crush the rice.
6.Mix the star anise, whole pepper and rice with marinated ribs.
7. Soak the lotus leaves in boiled water for5 minutes. Tips: It’s easier to wrap with softened lotus leaves.
8. Spread the lotus leaves on a plate and place mixed rice and ribs. Steamed for15 minutes over boiling water.
9. Unfold the wrapped lotus leaves and drizzle a little boiled oil. Tips: To brighten the dish.
10. Serve the ribs with chopped spring onion and chilli.

Bahan Rendaman
1 Sdt Minyak Wije N
1 Sdt Tepung Jagung
Gula Secukupnya
Garam Secukupnya
Merica Bubuksecukupnya
1 Sdt Saos Tiram
1 Bawang Putih Cincang
2 Sdm Minyak Sayur
Cara

. cuci bersih dan tiriskan
. lap kering dan tambahkan bahan rendaman

. cuci beras
. oseng peppercorn dengan bunga lawang tanpa minyak
. di oseng hingga berubah warna
. dinginka n
. blender beras
. terlalu halus
. tambahkan5 spices

. tata daun d lebarkan dan tata pork rib bungkus dengan rapi
